Botanic specificity
Grifola frondosa (G. frondosa), generally known as hen-of-the-woods or maitake in Japanese and hui-shu-hua in Chinese, is an edible mushroom with both nutritional and medicinal properties.
Traditional use
The Maitake mushroom is a large, fleshy polypore comprised of multiple, overlapping layers of caps that are 2 to 10 cm in diameter. This species is delicious and much sought after for both its culinary characteristics and its strong medicinal qualities. Fruit bodies and mycelium exposed to UV light can develop very high levels of Vitamin D2.
